NOODLE CUTLET
A delightful combination of noodles and white sauce.
Preparation Time : 30-35 minutes
Cooking Time : 20-25 minutes
Servings : 4
INGREDIENTS
Noodles, boiled
250 grams
Butter
2 tablespoons
Refined flour (maida)
2 tablespoons
Milk
2 cups
Cheese, grated
1/2 cup
Salt
to taste
Mustard powder
1/4 teaspoon
Black pepper powder
1/2 teaspoon
Bread crumbs
as required
Oil
1 teaspoon + to deep fry
METHOD
Heat butter, add refined flour and sauté for a couple of minutes. Gradually add milk and whisk continuously to avoid lumps. Add cheese, salt, mustard powder, black pepper powder and stir to mix well. Break the noodles and add. Mix well. Grease a baking dish. Transfer the mixture into it and spread evenly. Set aside to cool in the refrigerator for half an hour.Take it out of the refrigerator. Take a spoon-full of the mixture, roll it in fresh breadcrumbs and shape it as you wish. Similarly make other cutlets. Keep them in the refrigerator for fifteen to twenty minutes. Heat a pan. Add a little oil and place the cutlets on it. Cook on medium heat till both the sides are evenly golden. Drain and place them on an absorbent paper. Serve hot.
