Easy Chicken Pulao
Ingredients
Chicken 1/2 kg
Rice 2 cups
Onions (finely sliced) 2
Green chilies, slit 2
Ginger garlic paste 1/2 tsp
Tomato, finely chopped 1
Coriander leaves (chopped) 1 tbsp
Mint leaves 10-12
Water 2-1/2 cups
Thick coconut milk 1/2 cup
Salt to taste
Clarified Butter 1-1/2 tbsps + 1-1/2 tbsps oil
Marinade:
Curd 1/2 cup
Green chilies 3-4
Ginger garlic paste 1/2 tsp
Red chili powder 1/2 tsp
Turmeric powder 1/4 tsp
Coriander leaves 1/2 tbsp
Mint leaves 6-7
Lemon juice 1/2 tbsp
Salt 1 tsp
Spices:
Cloves 7
Cinnamon stick 1″
Cardamoms 3
Star anise 1
Mace a pinch
Nutmeg powder a pinch
Bay leaves 2
Method :
Marinate chicken with the ingredients called for ‘marination’ for 10 minutes. Heat oil and ghee in a vessel, add bay leaves, cloves, cinnamon, cardamom, mace, star anise and nutmeg. Saute for few seconds. Add sliced onions and green chillis and saute till onions turn transparent. Add ginger garlic paste and saute. Add chopped tomato, mint and coriander leaves and saute. Add the chicken along with marinade and combine well. Cook till the chicken is done and very little gravy left. Add little water and coconut milk and bring to a boil. Adjust salt, reduce flame and add the soaked and strained rice. Add mint leaves and coriander leaves and cook on low flame till the rice is cooked. Add 1/2 tbsp ghee and combine gently and serve hot with raita.
