Healthy Spinach Raita - (Microwave Recipe)

Instructions:
1. Fresh Spinach Chopped 1 Cup ( or Frozen Spinach)
2. Yoghurt 3 Cups
3. Chaat Masala 1 teaspoon
4. Lime Juice 1/2 teaspoon
5. Salt ( if needed as Chaat Masala already has some salt in it)" "This is a very simple, quick and healthy recipes.
Especially useful for people who are low in Iron.
Iron assimilation best happens in presence of Vitamin C. therefore this recipe is a good source of Iron and the Lime Juice makes sure that the Iron is assimilated into the body easily.

Especially good for pregnant ladies.


How to make it.

1. Take the Spinach and put it into a microwave proof container.
2. Add some water to this container ( 1 cup)
3. Now put this in Microwave and let it cook on high for 6- 8 minutes. ( Cover the container)
4. Once it is done let it cool down.
5. Now using a hand blender, make a fine paste of the spinach( Add some yoghurt if needed to help the blending)
6. Add all the remaining yoghurt.
7. Add the Chaat Masala and the Lime Juice.
8. Blend it further to make a smooth mixture.


Enjoy it with any meal.

Ps: If you want to make it as a chutney, then you can add more spices to it and it will serve as a chutney.

Just add some more Chaat Masala.
Add more lime juice and you have a spicy and healthy chutney to go with your Samosa and Pakoda.

Tip: you can slice a Red Onion and pour some chutney on it.

You get this kind of chutney/dip usually in the restaurants with onions to go with the food.

Especially greate with Tandoori Chicken or Chicken Tikka
