Malai Kulfi!
Ingredients:
1 liter full fat Milk.
1 cup Khoya or dry full fat milk powder.
1 standard can of condensed milk ( I used Rainbow).
1/4 cup sugar.
1/4-1/2 tsp cardamom powder.
1/4 cup pistachios, soaked and chopped.
Method:
1: Boil the milk with cardamom powder on medium heat and reduce it to 2 cups (it would take around 30 minutes or 45).
2: Add in the khoya/milk powder and condensed milk and cook further till the khoya/powder dissolves completely and a thick kheer like texture is achieved (around 15 minutes).
3: Add in the sugar and the pistachios, now cook till the sugar dissolves and take it off the stove.
4: Pour it in the Kulfi moulds or small plastic containers with lid ( I have used IKEA Baby plastic glasses, shrink wrapped), first let it cool down a bit then put it in the freezer.
5: Freeze it for almost 6-8 hours or overnight.
6: Take it out 8-10 minutes before serving and invert in on your serving plate, or place it upside down under running tap water and invert on the plate, it would drop in a while itself, serve with faloda or just plain. Enjoy..!!
