Egg Rice
Ingredients: Rice - 1 Cup
Eggs - 2
Peas/Matar - ½ Cup
Finely Chopped Onion - 1
Green Chili - 1
Cooking Oil - 2 ½ Tsp
Red Chili Powder - To Taste
Garam Masala - Few Pinches
Milk - 2 tsp
Chopped Coriander leaves - ½ tbsp
Salt - To Taste
Directions...
Chop onion & green chili.
Boil peas with water.
Beat the eggs along with milk, red chili powder, garam masala and salt.
Boil rice with pinch of salt, ½ tsp of oil and 3 cups of water. Drain rice and keep aside.
Heat 2 tsp of oil in a pan. Add chopped onion & green chili. Cook for 1 min.
Add beaten eggs (from step 2) and stir briskly. Stir for 2min then add peas, coriander leaves and rice. Continue stirring till the egg is completely cooked.
Serve hot with your choice of chutney and ENJOY!!!
