Yukhni Pulao
Ingredients:
Mutton 1kg
Chopped Onions 3
Green Chilies 3
Small Cardamom 5-6
Oil 1 cup
Yogurt ½ cup
Rice 2 ½ cup
Black Cumin 1 tsp
Ginger Garlic Paste 1 tbsp
Salt to taste
For Stock:
Onions 2
Garlic 1
Ginger 1 piece
All Spices some
White Cumin 1 tsp
Fennel Seeds 1 tbsp
Coriander Seeds 2 tbsp
Salt to taste
Method:
In a pan, add in 1 kg mutton, 3 glasses of water, salt, 2 onions, garlic and ginger.
Wrap all the spices including fennel seeds, 2 tbsp coriander seeds, all spices and cumin in a cloth and put it in the pan.
When the meat in boiled take the spice bag out.
In a pan, add in 1 cup oil and add in chopped onions and golden brown, take it out. Pu t half of the onion in the yogurt, 1 tbep ginger garlic paste, small cardamom, cumin and green cilies, cook it for 5 mins.
When the stock boils. Add in rice. Add in salt. Cover it and cook when the water dries. simmer it.
Farnish it with golden brown fried onions and serve.
