PEANUT BUTTER AND OATMEAL COOKIES
Nutritious yet delicious – kids will simply love these cookies
Preparation Time : 15 - 20 minutes
Cooking Time : 25 - 30 minutes
Servings : 4
INGREDIENTS
Peanut butter
1/2 cup
Oatmeal
1/2 cup
Castor sugar (caster sugar)
3/4 cup + 1 tablespoon
Refined flour (maida)
3/4 cup + 1 tablespoon
Soda bicarbonate
1/4 teaspoon
Cinnamon powder
1/2 teaspoon
Desiccated coconut
1/4 cup + 1 tablespoon
Roasted peanuts, crushed
2 tablespoons
Lemon rind , grated
1 teaspoon
Golden syrup
1 tablespoon
Milk
2 tablespoons
METHOD
Preheat oven to 180°C. Grease a baking tray. Take peanut butter in a bowl and soften it with a wooden spoon. Add sugar and mix well with the peanut butter. Sieve flour with baking soda and cinnamon powder into the bowl. Add oatmeal, desiccated coconut, crushed roasted peanuts, lemon rind, golden syrup and mix. Add chilled milk and mix into a dough. Do not knead the dough too much. Take marble sized portions, roll them into balls and press lightly.. Place these on the greased baking tray keeping sufficient distance between each. Bake in the preheated oven for about fifteen minutes. Turn them onto a wire rack to cool. Store in airtight tin.
