Sift the flour into a bowl with a pinch of salt and make a well in the centre. Drop in the egg yolks and the oil. Mix to a smooth batter with the milk and beat well. Cover and stand in a cool place for 30 minutes.
Meanwhile, slice the onions into rings about 1cm wide. Put the groundnut oil in a pan no more than 1/ 3 full and heat to 190C. Whisk the egg white until stiff and fold into the batter. Then dip the onion rings into the batter in batches and fry until golden brown - this should take 3-4 minutes. .
