MARINATED PRAWN SALAD
Prawn and coconut salad with a flavourful dressing
Preparation Time : 10 minutes
Cooking Time : 15 minutes
Servings : 4
INGREDIENTS
Medium prawns, peeled and deveined and blanched
15 (200 grams)
Coconut, scraped
1 cup
Shallots, sliced
4
Lemon grass stalk, chopped
2
Kaffir lime leaves, finely shredded
3
Fresh mint leaves
a few to garnish
Dressing
Brown sugar
a pinch
Lemon juice
4 tablespoons
Fish sauce
1 tablespoon
Fresh red chillies, chopped
2
Garlic, chopped
1 clove
Salt
to taste
METHOD
In a large bowl, toss together the prawns, coconut, shallots, lemon grass and lime leaves.For the dressing, mix together the brown sugar, lemon juice, fish sauce, red chillies, garlic and salt in a small bowl. Pour the dressing over the prawn and coconut mixture and toss gently to mix. Serve, garnished with fresh mint leaves.
