RAINBOW RICE
Colourful vegetable and rice medley
Preparation Time : 30 minutes
Cooking Time : 10 minutes
Servings : 4
INGREDIENTS
Steamed rice
2 cups
Oil
2 tablespoons
Carrot, chopped
1 small
Green capsicum, chopped
1 small
Cabbage, chopped
1/4 cup
Spring onions, chopped
2
Tomato ketchup
2 teaspoons
Black pepper powder
a pinch
Salt
to taste
METHOD
Heat the oil in a non-stick wok, add the carrot, capsicum, cabbage and spring onions and sauté for four or five minutes. Stir in the rice, tomato ketchup, pepper powder and salt and mix well. Serve hot.
Recipe Tip :
Add a quarter cup of hot water just before finishing. It will keep the fried rice nice and moist and not feel too dry.
