For fish batter:
20 pieces of 1" bone less fish strips.
2 tsp salt
1/2 tsp black pepper powder
1/2 ginger /garlic paste
2 egg
1/2 c flour
1/2 c corn flour
oil for deep frying
For coating sauce:
2 heaped tbsp shredded ginger
1/2 c water
1/4 c brown sugar ( can add more if u like it sweeter).
2 tbsp soy sauce
1 tbsp oyster sauce
1/4 c vinegar
2 tbsp roughly crushed peanuts
1 tbsp sesame seeds
1 tsp red chilli flakes.
Directions
Marinade the fish in it's batter & leave in the fridge for 2 hours.
Heat oil & double fry the marinated fish until crisp & golden (u need to fry the fish pieces twice = fry then strain, then do the same again).
Strain out the oil on a wired rack.
Boil the ginger in water then add sugar, soy sauce, oyster sauce & vinegar.
keep boiling until the sauce thickens (like thick syrup).
Add the fried fish then sprinkle the peanuts, sesame & chilli flakes.
Toss all well to coat.
Bring out on a serving platter & serve hot as an appetizer
