Firni
Ingredients :
* 1 liter of milk and a small tin condensed milk
* 4-5 tbs sugar (reduce amount if adding sweetened condensed milk)
* 1/2-cup rice flour
* dry fruit --pistachio, almonds
* 1tsp kevera essence
* seeds of 3-4 small illaichi
Method :
In a pot add milk and illaichi seeds, rice flour and sugar. Leave on a very low flame to cook and keepstirring. When the mixture thickens add kevera essence and remove from heat.Garnish with dry fruit.
Sheer Khurma
Ingredients :
� Milk -1 kg
� Vermicelli -1/2 cup
� Dried dates -6 (soak in hot water & remove seeds)
� Almonds -12 (blanched and slivered) .Pistachios -12 (blanched and slivered) .Small cardamoms -6 Cloves -4
� Sugar -2 1/2 cups
Banaspati -2 tbsp
Method :
Boil milk and leave to cool. In a pan heat banaspati and add cloves and cardamoms. After 2 minutes fry vermicelli and take it out. In the same banaspati fry the nuts and then add milk. When milk starts to boil add vermicelli and sugar and simmer for 20 minutes. Leave to cool and then serve
