Spiced Nuts
Consider doubling this nutritious snack when you make it. It will be eaten quickly.
4 tablespoons butter or margarine
2 tablespoons sugar
2 teaspoons garlic salt
1 teaspoon ground cinnamon
2 cups unsalted dry roasted peanuts
2 cups pecan halves
1 cup Chinese rice noodles
1 cup raisins
Place butter in a 12X8X2 inch baking dish; microwave on HIGH for 45 seconds or until butter is melted. Stir in seasonings. Add nuts and noodles; toss gently to coat. Microwave at HIGH for 7-8 minutes, stirring after 4 minutes. Add raisin, stir and continue to cook on HIGH for 2 minutes. Let stand until cooled, stirring often. YIELD: 6 cups. Peanutty Garlic Cheese Appetizers
This is so good, it's hard to believe it's nutritious.
4 oz. garlic flavored Boursin or cream cheese
1/2 cup peanuts, finely chopped
Salt, pepper
Assortment of crackers, including wheat and rye
Leaf lettuce
2 Roma tomatoes, thinly sliced
1 Roma tomato, chopped
Fresh thyme
In a small bowl, thoroughly blend cheese and peanuts. Season to taste. to assemble, top each cracker with lettuce and a slice of tomato. Spoon peanut cheese spread over tomato slice. Garnish with chopped tomatoes and a sprig of fresh thyme. NOTE: Rye bread fingers or French baquettes can be substituted for crackers. Cut rye bread into 2 inch slices; slice French bread diagonally into 1/2 inch slices. Brush each side with peanut oil and toast both sides until lightly browned.
Mexinut Dip
Spicy and very tasty
1 can (11 1/2 oz) condensed bean and bacon soup
1 cup shredded cheddar cheese
1 can (10 oz) tomatoes and green chilies
2 tablespoons finely chopped onion
1 tablespoon hot chili powder
1/2 cup peanut butter
Conventional method: Heat all ingredients in top of double boiler. cook and stir over boiling water until cheese is melted and mixture is blended.
Microwave method: In 2-quart casserole, combine all ingredients. Cover with a glass lid. Microwave on HIGH for 5 to 6 minutes or until cheese melts, stirring occasionally. Stir before serving.
Chocolate Peanut Crumble Bars(Cookies)
An all time favorite candy is even better as an ingredient in these cookies.
1 cup all-purpose flour
3/4 cup quick oats, uncooked
1/3 cup brown sugar
1/2 teaspoon baking soda
1/2 cup butter or margarine
1/2 teaspoon vanilla extract
4 (2.23 oz) Snickers bars, cut into 8 slices each
Preheat oven to 350 degrees. Butter the bottom of an 8-inch square baking pan. Set aside.
Mix flour, oats, brown sugar and baking soda together. Set aside. Melt butter or margarine in a medium saucepan. Removed from heat and stir in dry ingredients. Add vanilla and blend. Mixture will be crumbly. Press 2/3 of the mixture into prepared pan. Arrange candy slices in pan about 1/2 inch from edges of pan. Top with remaining mixture. Bake 20-25 minutes or until edges are golden brown. Cool in pan. Cut into square. YIELD: 16 2-inch squares.
