Ingredients:
6 spring onions, cut into strips
8tbsp carrots, cut into strips
12 oz boneless beef cut into strips
2tbsp oil
1 garlic clove, crushed
1 inch piece ginger, peeled and finely chopped
5 cups beef stock
3tbsp Soya sauce
75g/3oz egg noodles
75g/3oz spinach, shredded
Salt and pepper to taste
Method:
Heat the oil in a saucepan and cook the beef until browned.
Add garlic, ginger, spring onions and carrots to the pan and stir-fry for three minutes.
Add the beef stock, Soya sauce and seasoning.
Bring to boil and simmer, covered for 10 minutes.
Break up the noodles and add to the pan along with spinach.
Simmer gently for five minutes or until the beef is tender.
