Ingredients:
Soya sauce 1/4 cup
Sugar 2 tbsp
Vinegar 1 tbsp
Ketchup 1 tbsp
Ginger 1/2 tsp
Minced garlic 1 tbsp
Corn flour 1 tsp
Chicken breast (cut into 2-inch strips) 1/2 kg
Oil 2 tbsp
Carrot 1
Capsicum 1
Peas ½ cup
Pineapple chunks (drained)
Pineapple juice 1/4 cup
Boiled or stir fried rice 1 cup
Method:
Mix soya sauce, sugar, vinegar, ketchup, ginger, minced garlic, corn flour with reserved 1/4 cup pineapple juice in small bowl. In large pan, stir-fry chicken in hot oil 5 minutes. Add vegetables, stir-fry few more minutes. Stir in pineapple and sauce, heat through. Serve over boiled or stir fried rice.
