1/2 cup wheat bran
3/4 cup white whole wheat flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/8 tsp nutmeg
1/4 cup unsweetened applesauce
1/3 cup Fat Free Milk & Omega-3s
1/4 cup brown sugar, packed
2 tbsp Butter & Canola Oil Blend
1 tsp vanilla
1 large egg, beaten
1 large apple, peeled and chopped fine
1/2 cup chopped walnuts
Recipe Steps
Preheat oven to 400°F. Line a muffin tin with liners.
Combine the wheat bran, white whole wheat flour, baking soda, baking powder, cinnamon and nutmeg.
In a separate bowl, beat applesauce, milk, brown sugar, butter, vanilla and egg. Add to dry ingredients and stir just until moistened. Fold in apples and walnuts.
Spoon into paper-lined muffin cups and bake for 18-20 minutes, or until a toothpick inserted comes out clean.
