Non-Stick Cooking Spray
10 oz cooked chicken breast, chopped
1/4 cup mild salsa
1/4 tsp dry taco seasoning mix
10 (6-inch) thin yellow corn tortillas
1/2 cup reduced fat shredded Mexican cheese blend
3 tbsp Cooking Oil
1 cup mild salsa, for serving
Recipe Steps
Preheat the oven to 375°F. Spray a baking sheet with Non-Stick Cooking Spray.
In a medium bowl, combine the chicken, salsa and taco seasoning; mix well.
Dampen two paper towels and place tortillas between them. Microwave for about 1 minute, until tortillas are warm and pliable; set aside.
Drain any excess liquid from the chicken, add the cheese and mix well.
Place one tortilla flat on a clean dry surface keeping the rest between the paper towels, and spoon about 2 heaping tablespoons of filling onto the tortilla. Spread over the entire surface, then roll tortilla tightly into tubes. Secure with toothpicks, if needed, and place seam side down on the baking sheet. Repeat with remaining tortillas and filling.
Brush oil over the tortillas and bake in the oven until golden and crisp, about 16 to 17 minutes.
Allow to cool for 5 minutes. Remove toothpicks. Serve with additional salsa for dipping.
