Ingredients:
2 eggs
1 ½ cups sugar
1 cup shredded coconut
½ cup softened butter
½ cup milk
¼ cup flour
Pinch of salt to taste
One 9-inch pastry shell, unbaked
Method:
Preheat oven to 325°F (160°C).
Beat the eggs and gradually add a pinch of salt and sugar
Blend butter first, then the flour and the milk
Add the shredded coconut
Put into the pastry shell
Bake for about 50 minutes or till the whole thing set to slightly brown
