!!Chicken and Vegetable Curry with Rice!! -

Ingredients: 1/2 Chicken breast, cut in small bite size cubes One Onion, white or any. 1/4 cup peas 1/4 cup, baby carrots diced, 1/2 inches 1/8 cup button mushrooms (optional) 1/8 cup Baby corns (sliced) (optional) 1 tsp Ginger 2 tbsp Oil 3/4-1 cup low fat cooking cream 1/4 tsp Turmeric 1/4 tsp Oregano a pinch or two of Tarragon (I just adore the aroma) 1 tsp or more Cayenne Pepper 1/4 tsp black pepper 1/2 lemon squeeze Salt as you like Method: 1: Put the oil in the Wok, fry the onion for a minute, add in the chicken pieces and the ginger and keep on frying (onions are supposed to stay a bit on the crisp side NOT brown, They'd cook with the chicken anyway). 2: While the chicken is frying, add in salt and all the other spices one by one but keep on frying, when the spices have all mixed together, put a lid on and leave it on a slow flame to cook, no need to add water, but if it is a habit, then go ahead, not too much there would be water from the vegetables anyways. 3: So now when you feel the chicken has been cooked almost through, add the desired vegetables and let them cook through DO NOT let them over cook. 4: When the Vegetables are done, add in the cream, stirring while you add, now let the cream simmer and soak up the flavors, do taste it for spices, sometimes it needs more salt or more pepper. 5: When a good runny gravy is achieved, stir in the lemon juice and enjoy hot with either boiled rice or Butter rice. 6: When done eating this delicious curry, have a bowl of cold sweet fruit to feel more refreshed.
